Connected to 2010
Excavation began beneath the winery, cutting into the Western Ridge to create space below ground. What started as soil and rock would become the foundation of The Underground.
Foundations
The shift from excavation to structure marked a turning point. Reinforced concrete walls defined the space, creating a cellar built for longevity, stability and function - where wine could mature without interference.
First look
The first glimpse inside The Underground. No air-conditioning required - the cellar relies on the earth’s natural cooling. A concrete arched roof above, with soil layered on either side. The space holds a steady 11–14°C year-round, creating ideal conditions for slow, consistent maturation.
Something extraordinary
The once underutilised space was reimagined as an immersive Underground experience. A platform was built above the cellar floor, and an LED-lit oval bar with fixed seating was installed - positioning guests within the working heart of the winery.
The Underground
The Underground opened for private bookings. A one-of-a-kind experience in the Barossa - intimate, architectural and grounded in place. More reminiscent of a cellar in Burgundy than a traditional Australian tasting room.
